Fun and games with UEFI/Ubuntu 20.04/Windows 10 last night. Windows refused to boot and Grub said bootmgfw.efi was missing. Ubuntu could see it, after a bunch of swearing I noticed that a copy I'd made of bootmgfw.efi was visible to Grub
The fix was doing a move of bootmgfw.efi and bootmgr.efi then copying them back to the original locations then grub could see them just fine.
My guess is that some FS meta magic fell off and doing the mv/cp dance restored the sprinkles? But WTF #UEFI
